Eckhart is a vinekeeper in Empath Abbey in Ultima VI.

Eckhart was a friendly old man who was happy to talk about his garden and the history of Empath Abbey. The gardener related how the abbey had been founded many centuries ago, and because of the beautiful rosebushes they grew there, they became known as the Brotherhood of the Rose. He praised the enchanter Nicodemus who lived to the east for creating seedless grapes that could be grown by grafting seedless branches on to established vines. The results of the vineyard were then processed by Faren the winemaker, to create the Abbey's signature drink. If the Avatar talked to Eckhart while gardening, the kind man would even give the hero a handful of fruit to enjoy, while also warning the Avatar to stay out of the flightpath of Zeke the apiarist's bees.[1]
