Jones is the shipwright at The Rusty Bucket in Buccaneer's Den during the events of Ultima V.

An angry and short-tempered old man, Jones was little loved by the other citizens of Buccaneer's Den in Ultima V: Lazarus. He admitted that he did little actual construction of his ships any more, but he closely supervised all of the vessels he sold to ensure they were of sound build. The ornery old shipwright also fixed up ships damaged from the many raids by the pirates of The Den and was busy repairing vessels after conflicts with Blackthorn’s navy.[1]
Jones told the hero that the regent's ships made it hard to get in good wood, iron, and gunpowder to construct his vessels, and the local wood was too hard to be of use for vessel construction. During Blackthorn's embargo of the island, wood had become so scarce that he resorted to making composite masts, and was now having to repair many of those. He had the most trouble acquiring gunpowder, saying the resources to make it were scarce and it took time and skilled craftsmen to make, for the powder was dangerous and had to be ground slowly and saltpetre was an extremely rare component. Jones did offer the hero his somewhat unique method of producing the rare ingredient.
Jones admitted that Thorkin always got his work done on time, but knew little about him.
